Slow Cooker Flank Steak Tacos Recipe
Ready for delicious flank steak tacos that you can make in your slow cooker? This recipe is a crowd pleaser and can be adjusted to your likings.
Slow Cooker Flank Steak Taco Recipe
(This recipe easily feeds our family of four, with maybe a serving or two leftover for lunch the next day.)
Ingredients:
8-12oz flank steak
1/2 large onion sliced
1 bell pepper sliced
1 tsp salt
1 tsp cumin
1 tsp chili powder
1/4 tsp pepper
1/4 tsp garlic powder
1/2 cup salsa
3 chipotle peppers in adobo sauce (1-2 peppers = mild, 3 = medium, 4+ = hot)
Place the peppers and onion on the bottom of the crock pot and lay the flank steak on top. Add in the remaining ingredients and cook on low for 5-6 hours. Shred the beef and add it back into the crockpot with the other ingredients and keep on warm until ready to serve.
Once the beef is shredded and added back to the crockpot, it combines with the juices and peppers and onions to make a mouthwatering combo.
Tips & Tidbits for cooking the Flank Steak Slow Cooker Tacos:
You can use any size flank steak that you would like, you just may need to adjust the seasonings and amount of salsa.
I recommend cutting the flank steak in half, after it is cooked, and before shredding. This will make the size of the meat a little more manageable.
I personally like to use salsa verde for this, but any salsa you have will do.
To make this flank steak taco recipe low carb friendly, serve over cauliflower rice and add all the fixings on top. My favorite is guacamole!
This is great for leftovers. Our personal favorite way to serve it for leftovers is on top of tortilla chips, add refried beans, corn, extra salsa and cheese for nachos.
