Ham & Broccoli Quiche

I hesitated to post this as an official “recipe” on the blog because it is so easy.  But, I know when I am looking at recipes I look for the easiest ones! 

Quiche is something that I make when I want to feed my family something healthy but don’t feel like cooking.  You can serve quiche for breakfast, lunch and dinner…and I think that is what makes it one of my favorite menu items.  

Okay, so here’s the deal with quiche, it comes down to three ingredients: eggs, milk and cheese.  Crust, no crust, vegetables, no veggies…totally up to you. Anything you want to add in is bonus.

Our family’s favorite combo is egg, ham, cheddar cheese and broccoli, with bacon, spinach and mozzarella coming in second.  (Do my kids normally eat spinach, no, but they will in a quiche!)

Ham, Cheese & Broccoli Quiche Recipe:

Ingredients:

  • Store bought pie crust (you could make your own, but then it wouldn’t be an easy recipe)

  • 8 eggs (yes, I know it seems like a lot of eggs, but when I make a quiche I want it to feed everyone)

  • 1/2 cup milk 

  • 4 oz. of diced ham

  • 1 cup shredded cheddar cheese

  • 1+ cup of frozen broccoli

Instructions:

  • Preheat oven to 375 degrees

  • Roll out pie crust into dish and bake until slightly golden

  • Whisk eggs and milk until well combined

  • Add in ham, cheese and broccoli

  • Season with salt and pepper to taste

  • Pour over baked crust and place back in the oven for approximately 60 mins.

  • Remove quiche and let it cool for 10 minutes

Tip: Around the 30 minute mark, if the quiche looks like the top is getting too brown, cover it with foil and continue cooking until the eggs are completely set.
